I need to cut some parts that need to be bent. I have tried adding a slot on the "bend" line, but when I go to simulate the g-code run it consistently ignores my slots. Do I need to do the parts as a "sheet metal" design??

By simulate do you mean in Fusion 360 or in Mach or you table software Or SheetCam.

Your slots need to be wider, they must be your kerf X 2 plus a little or Fusion will not read the invalid cuts.
