I'm a business man as well, but when the price of the project exceed budgetary restraints jobs are cancelled. I had bid a 20,000 lb+ project in the height of the metal price madness but the project was canceled and built from concrete. I probably had 100 hrs in estimating that project, which is now water under the bridge. Steel like fuel is used in the manufacturing / distribution of everything on this planet so yeah it all adds up.

That’s exactly the risk/reward of which I speak. It is the business owner’s job to choose the direction of the company and proactively change as needed. To be perfectly clear, I have not always done this successfully in my years of self-employment. I’ve gotten some right and some wrong. Wildly successful owners get it right almost all the time. The rest of us hammer away and try to win more than we lose.
