The one problem I see with this is if a project is going to be outdoors the un-coated section will rust and eventually bleed rust. For an indoor project this would work well.

Rather than peeling the tape off, couldn't you just cut it and leave the tape with the power covering attached? Then you wouldn't have bare steel exposed.
